AT&T Stadium's executive chef, Orazio LaManna, says it's pretty simple β the premiere venue in all of sports better serve food that matches the scope of the arena.
"Our mindset is always to put out the best quality for our fans," said LaManna. "And we really focus on freshness."
So when he and his culinary team began cooking up fresh ideas for the upcoming football season, they decided they wanted to give people a true "farm-to-fan" experience. That means anything they can make fresh in their kitchens, they will.
"We just want to create things that are delicious," said LaManna.
On Friday, they unveiled several of their new creations. They include:
- The Fire Roasted Turkey Burger: Fresh ground turkey breast seasoned with onion, salt, and pepper, topped with Legends Chef crafted Fire Roasted Chili Pepper Hot Sauce, aged white cheddar, apple cider vinaigrette slaw, served on a freshly baked whole wheat bun, and topped with a savory fried onion ring.
- The Texas Torta: Beef barbacoa, adobo chicken, and pork carnitas roasted with Legendsβ signature seasoning, and topped with house-made refried beans, fresh pico de gallo, and grilled onions. The sandwich is topped with a fried whole jalapeno wrapped in hickory smoked bacon.
- The Texas Chicken & Waffles: Hand-battered tender chicken classically seasoned and fried, crispy onion rings, pepper jack cheese, pecan-maple mayonnaise, and crisp bacon sandwiched between two Texas-shaped waffles.
- The Cowboys Surf & Turf Sushi Roll: Tempura premium shrimp, avocado and asparagus, surrounded in traditional sushi rice, tender seared American Wagyu beef, and topped with jalapeno and garden fresh cilantro.
- Signature Scratch-Made Cupcakes: Texas-sized cupcakes in a variety of flavors including Texas Sheet Cake, Chocolate Chip Cookie Dough, Red Velvet, and Pumpkin Praline.
"Stadium food has come a long way in the past few years," said LaManna. "It's really, really evolved in the sense that people come here and they want to make it an event."

A team of 200 chefs and cooks are already making preparations for Sunday's big game. They'll spend the next three days working in 12 different kitchens across the stadium to make sure everything is ready.
"When you have great chefs taking care of each piece, it really make it more manageable," said LaManna.
So they hope Cowboys fans come to Jerry World hungry for more than just a win.
