Texas Rangers and Plano police are investigating the shooting, which occurred at a QuikTrip in the 6400 block of Preston Road about 4:30 p.m. as the officer was filling up her patrol vehicle.
A woman ran to the officer for help, saying that a man was inside her vehicle with a gun. The officer saw the man with a firearm in the vehicle and exchanged gunfire with him, striking him, said Plano police spokesman David Tilley.
The officer was not injured.
Officers administered first aid to the man while medics were on their way. The man was then transported to a hospital, where he was later pronounced deceased.
Police identified the man Tuesday as 63-year-old Eleuterio Amaya-Torres.
