    Spanish Chorizo Couscous
    4 oz couscous
    2 ox diced chorizo
    2 oz fire roasted corn and peppers
    salt and pepper to taste

    Combine all ingredients in a saute pan and cook until hot.


    Chimichurri Sauce
    2 cups minced parsley
    2 cups minced yellow onion
    4 tbsp minced garlic
    11/2 cup minced Anaheim pepper
    2 tsp oregano
    2 tsp thyme
    1 Poblano pepper
    2 tsp crushed red pepper
    11/2 cup lemon juice
    2 cups olive oil
    1 cup white vinegar
    2 tbsp salt
    2 serrano peppers

    Combine all ingredients in a stockpot and cook over low heat until the sauce thickens.

    Couscous
    3 cups couscous
    3 cups chicken stock
    1 tsp onion salt
    1 tsp garlic powder
    2 tbls chopped herbs (rosemary, thyme and parsely)

    Combine all ingredients in a stockpot and cook over low heat until couscous is firm to the bite.
