Burundi Civil War Survivor Opens Jimboy's Tacos in Irving with Celebration

Jimboy's Tacos is celebrating its second location opening in Texas with its Grand Opening Saturday from 10 a.m. to 5 p.m.

The second American-style Mexican food chain restaurant will open in Irving at 3310 N. Beltline Road.

This opening is particularly special for owner Mathias Basabose.

"I escaped a horrific civil war in my country of Burundi, built a successful international business, and feel fortunate to be opening a Jimboy's Tacos restaurant in Texas," said Basabose.  "It's everything I hoped it would be."

Basabose earned his marketing degree in 1978 and began working in food and public services until he opened his own factory in 1993. However, the Burundi Civil War began in 1993, and he was forced to flee to the Netherlands with his family and  nothing else.

"Mathias' story is inspirational, and we are honored that he is part of our Jimboy's Tacos family," said President and CEO of Jimboy's Tacos, Karen Knudson-Freeman.

To celebrate the grand opening Saturday, the restaurant will be giving away two free ground beef or bean tacos.
