Matt McCallister Plays With Bacteria


After departing from Stephan Pyles last month, chef Matt McCallister announced that he would be sticking around Dallas for a few months to "play" with some of his favorite local chefs before leaving to work in the esteemed kitchens of Alinea, McCrady's and French Laundry. (Don't worry, he'll be back to open his own place within the next couple of years.) Play (no relation to The Feast Play) is a series of limited-seating dinners wherein he experiments with different techniques to create forward-thinking dishes. (Think Fuego.) Last week's seatings at The Second Floor sold out within four hours of its announcement, and the dinner planned for March 3 at Salum is already booked solid.
