There's one in Fort Worth's northside, a second in Weatherford, and now the area around Texas Christian University has its own Los Vaqueros restaurant. Los Vaqueros University at 2880 W. Berry St. opens for business Thursday.
"Our concept here is very different from our other restaurants," owner Vicki Cisneros said. "I call it my QSR2, which basically means that we offer quick service (guests can walk up to the quick service area counter, order, be seated, and have their food brought to the table), or they can dine at the bar, or take advantage of our small formal dining room with ivory linen table cloths and cobalt blue napkins with full service, wine and dessert of the month. "
And with the new restaurant comes a new kind of margarita, a sugar-free one Cisneros calls the "senorita. So you can keep that senorita figure."
The Cisneros family's decision to add a third restaurant comes in part from its long-time relationship with TCU and the nearby St. Andrews School community.
"We have a loyal customer base from this area," explained Cisneros. "I enjoy these college kids and am hoping to provide a fun, yet nice atmosphere for them to dine and visit with their friends."
Between the dining room, the quick service area, the bar and patio outside, the restaurant seats about 150 people and expansion plans are already in the works.
"Coming soon, in the fall of 2009, we will be completing an additional 2,200 square feet next door to accommodate the demands we have for banquets, rehearsal dinners, and meetings, " Cisneros said.
Los Vaqueros University also means part-time and full-time jobs for nearby college students and residents.
Cisneros vows that the family's new restuarant will be a great asset to the TCU community in other ways.
"We have plans for various programs which include offering each month a sorority or fraternity of the month with 10 percent of the student proceeds going directly to their individual philanthropy. We hope to continue to support St. Andrews, TCU, Nolan Catholic High School, as well as many other schools and organizations who have made our journey to this area possible," said Cisneros.
