Table side service is as exciting as the food

Cantina Laredo, nestled in Sundance Square, is home to unique dishes that sizzle north of the border -- and the ambience is as important as what you order.

“It’s a real top notch restaurant. It’s not your typical neon colors that you see in a tex-mex restaurant. It’s more of an upscale look. Nice light woods, tile, stone, no décor on the walls. It’s very simple,” said restaurant operator Mitch Johnson.

Just as much thought was put into the menu.

“We try to push that we are not Tex-Mex. We’re a little bit more. We’re upscale. We’re gourmet. We do steaks, seafood. A lot of our enchiladas are not your typical enchiladas,” said Johnson.

One popular seller is the enchiladas veracruz stuffed with spinach sauce and served with tomatillo sauce. Other popular items are the tableside guacamole appetizer and the signature margaritas like the Frozen Mango Margarita or the Casarita.

“They are very popular. There is no mix in the house. It is from scratch margarita. We use fresh lime and lemon every day; make our own simple syrup, Quantro, that’s it. It’s a great margarita,” said Johnson.

Back to dinner, one more favorite is the Chilean Seabass and special with steak.

“The Camaron Poblano Asada. It’s something that’s totally unique. It’s a poblano pepper that we stuff with shrimp, mushrooms and spinach. We wrap it in a Carne Asada or a grilled skirt steak with a little Chimmy Churi sauce,” said Johnson.

If you're in the mood for something sweet, your evening can end with sizzling Mexican Apple Pie served tableside with cinnamon ice cream and brandy butter.
