WASHINGTON -- President Donald Trump’s pick to head food safety at the U.S. Department of Agriculture is a Texan who testified in the “pink slime” defamation lawsuit against ABC News.Mindy Brashears, a food safety professor at Texas Tech University, received national attention in 2017 as an expert witness in the trial where she called South Dakota-based Beef Products Inc.’s scrutinized meat product “definitely meat and definitely beef.” The Texas Observer first reported Brashears’ connection to the “pink slime” case Wednesday.  Continue reading...
