Cafe operator Ed Murph tells the story of a childhood "mad scientist" moment when he filled a plastic bag with a buoyant gas and released it, largely to see how far it would go. He told the story over the weekend, as he prepped for Tuesday's opening of the Plano Norma's Cafe. It's the fifth iteration of a brand Murph bought in 1986 as a single iconic location born in 1956 in Oak Cliff. The fourth location, on Park Lane, in Dallas opened last summer.
