Wood burning oven reaches 900 degrees!

Pizza man Jay Jerrier is finally putting down roots in Deep Ellum after redefining pizza delivery.

“We’ve been dragging a mobile wood burning oven on a trailer all around town. We finally found this really cool spot in Deep Ellum,” said businessman Jay Jerrier who opened the Cane Rosso pizzeria in Deep Ellum this past February.

Jerrier’s new venture is introducing the area to Neapolitan perfection.

“The food is something I have been passionate about since my honeymoon in Italy. It’s true authentic Neapolitan pizza. We don’t cut any corners. We make it the exact same way you get it in any of the major pizzerias in Naples. We import our flour from Italy. We import our tomatoes from Italy. We make all our mozzarella fresh in house,” said Jerrier.

One of his favorite pizzas is the Vesuvio stuffed pizza. It’s made with ricotta cheese, mozzarella, ham, sausage and tomato sauce.

“I really wanted to amp up the Neapolitan experience, so I got one of my friends who was born and raised in Naples to come and take over the roll as lead pizza maker,” said Jerrier.

Beyond authentic pizzas, diners can also get the Classic Neapolitan Calzone made ricotta cheese, mozzarella and ham. Those of you who love dessert will adore the S’mores Calzone with marshmallows and chocolate chips.

All the restaurant's creative creations are cooked in a specially-built wood burning oven that is typically 900 degrees. When cooking the calzones, they are barely put inside. They sit in the doorway for a couple of minutes and are constantly being turned. The pizzas make it through the threshold and placed fully inside, but are attended to just as much.

When it came to naming some of the pizzas Jerrier kept it all in the family honoring his dogs and relatives.

“Emma and El are my kids so they have pizzas named after them. Special K is my wife Karen, she has a pizza. It’s all about passion and what we put into the pizza is a little bit of us and is why everything means something here,” said Jerrier.
