Marinade:
1/4 c soy sauce
1/2 c olive oil
3  cloves garlic
Bunch scallions (2 for sauce. Rest for searing with peppers and onions)
Zest of 1 lime and 1 orange
1/2 tsp cumin
2 T brown sugar
Juice of 1 lime
Juice of 1/2 orange
1-2 T chipotle pepper in adobo sauce (I use just the sauce. If you want more heat, add a pepper.)
1/2 tsp red pepper flakes optional for different heat

Zip all above ingredients with immersion blender.

2 red bell peppers, sliced into 1/2 in pieces
2 yellow bell peppers
2 Red onion, sliced into
Rest of scallions

Serve with:
Flour tortillas
Sour cream
Avocado
Cilantro
Salsa
Pico de gallo etc

Red & Yellow & orange peppers
Flour Tortillas
Avocado
Tomatoes
Jalapeño
Sour Cream
Cheese: Monterey Jack, White Cheddar, + 2 more additional cheeses of your choice
