Executive Chef Thomas Welther said he uses a lot of fresh, local ingredients and a very “uncomplicated cooking-style.”
His funky twists on typical bar food -- beet pickled deviled eggs, pork cracklings with malt vinegar with Hungarian paprika and tasty flatbreads (snag the recipe here) -- make for great finger food.
The dinner menu offers seasonal/healthy fare that isn’t typical for a lounge wherein design and technological eye candy has taken the front seat.
The roasted golden beets and green bean salad, cassoulet of braised lamb shank and Kobe cheeseburger served with Parmesan fries are hearty entrees worth dipping into your pocket for.
Media Grill + Bar has one of the largest commercial flat screens available in the country (‘103 inches), 26 HD displays, 42-inch plasma TVs on almost every wall and an i-Bar (one of two in the country according to reps from the Hilton Anatole).
Welther traveled the country with the Hilton Anatole’s Director of Food and Beverage, Ed Dorman researching innovative restaurant concepts. Las Vegas has obviously left quite an impression on the two men.
