    Espresso Crème Brulee

    Ingredients
    3 cups sugar
    1½ cup brown sugar
    36 eggs
    18 egg yolks
    12 cups cream
    3 cups crème fraiche
    4½ cups milk
    3 scraped vanilla bean
    Coffee extract measured to taste
    Mint for garnish

    First mix together eggs, yolks, sugar and crème fraiche. Then bring milk, vanilla beans and cream to a boil and temper into an egg mixture. Finally, add coffee extract to taste. Sprinkle sugar atop crème brulee then heat with a blowtorch. Chiffonade your mint-garnish finished desert.
