Recipe: Texas Fried Turkey

Sink your teeth into Lone Star Steaks' tasty recipe for fried turkey.

Ingredients:

1 10-12 lb. turkey
5 gallons water
4 cups kosher salt
3 gallons peanut oil
3 cups chicken broth
8 Tbsp. Tabasco

Cooking Turkey:

In a large container, mix the water and 4 cups of kosher salt together.

Place the turkey in the brine mixture (salted water) and let sit for no less than 4 hours and no more than 12 hours.

Remove the turkey from the brine and set aside.

In a large pot, heat the oil to 375 degrees. While the oil is heating, combine the chicken broth and Tabasco in a bowl.

With a large syringe and needle, inject the broth mixture into all parts of the turkey.

When the oil has reached 375 degrees, gently drop the turkey into the hot oil and cook for 3 minutes for each pound the turkey weighs.

When done, the turkey will float to the surface with a perfectly crispy, brown skin. If you are unsure, you can test the meat for doneness at the hip joint or insert a meat thermometer into the breast. It should register 180 degrees.

Seasoning Turkey:

In a mixing bowl, combine the kosher salt, brown sugar and Chile powder, and set aside.

When the turkey is done frying, remove it from the hot oil and set it on a large sheet tray.

While the turkey is still hot, season it with the seasoning mixture, making sure to completely cover the turkey.

Place the seasoned turkey in the oven for approximately 25-30 minutes, or until done.

Remove and serve warm.
