Makes 8 doughnuts

INGREDIENTS
1/2 cup sugar
2 tablespoons ground cinnamon
2 tablespoons roasted and crushed sesame seeds
1 tube Pillsbury original biscuit dough
4 cups Crisco shortening

INSTRUCTIONS
Mix the sugar, cinnamon, and sesame seeds in a medium-size bowl. Pop open the tube of dough and pull apart the biscuits—they come preportioned, so this will be easy. In a big, heavy pot, heat the shortening over high heat; you’ll know it’s ready when a tiny piece of biscuit dough sizzles when added to the oil. Fry the biscuit dough until each piece becomes puffy and brown on all sides, about 2 minutes. Flip the pieces over and fry them for 2 minutes more. Pull out the doughnuts and rest them on paper towels for a minute or two, then toss them immediately in the sugar mixture.
 
Repeat.
Eat.
Get bloated.

The Porky Melt
Serves 6

INGREDIENTS

Bratwurst

1 1/2 lb. extra fatty pork shoulder, cut and trimmed​​

1/2 lb. ground beef​​​​​​​

1 oz. salt ​​​​​​​​

2 1/2 oz. nonfat dry milk powder​​​​​​

1/2 tsp. white pepper​​​​​​​

1/2 tsp. ground ginger​​​​​​​

1/2 tsp. ground nutmeg​​​​​​​

1 cold whole egg, beaten​​​​​​​

1/2 c. cream​​​​​​​​

1/4 lb. cheddar cheese, diced small​

4 slices of cheddar cheese​


INSTRUCTIONS

With a knife, dice to medium size fatty pork shoulder and ground beef. Season with dry spices and dry milk, and grind through a medium die meat grinder. Or ask butcher to grind extra fatty pork shoulder, then mix ground pork shoulder and ground beef with all dry spices and dry milk by hand or with a stand mixer. Using a paddle attachment, mix egg and cream mixture into meat mixture. Fold in cheddar cheese. With hands, portion into 6-ounce patties.

In a cast-iron pan or griddle, cook patties on medium heat in 1-2 tbsp. oil for 3-4 minutes. Flip over, and cook for another 3-4 minutes. When patties are almost done cooking (around 2 1/2 minutes), add a slice of cheddar cheese (or shredded) on top of each patty. Melt cheese by using a lid (or another pan) to cover. When cheese is completely melted and patties are cooked through, remove and put to the side.

 
Sandwich, per person

2 pieces marble rye bread, toasted and buttered​​​​

2 oz. yellow onions, grilled​​​​​​​​​

1 6-oz Bratwurst patty

Deli mustard, to taste​​


Butter one side of each slice of bread and toast in cast-iron pan or griddle at medium heat until it turns golden brown. Remove and set aside. Cut onions into 1/4-inch thick round slices, grill on high heat with salt, pepper and oil, for about 3 minutes. Place in a bowl and wrap with plastic wrap—they will continue cooking.

Spread deli mustard on non-buttered side of each slice of marbled rye bread. Stack patty, add onion, and top with other slice of bread.

INGREDIENTS

4 Boneless skinless chicken breasts

6 Aunt Jemima frozen qquare waffles

12 Toothpicks or small skewers

2 cups yogurt

2 cups Franks Red Hot Sauce

6 Strips of cooked Apple wood smoked bacon

6 Slices of yellow American cheese

6 C Rice flour

3 qrt Vegetable oil

Pinch salt

Pinch cayenne

2 C Spicy Maple Syrup (Recipe Below)

 
INSTRUCTIONS

Combine yogurt and Franks Red Hot Sauce.

Cut chicken breast in 2x4 inch strips.

Put chicken in a large zip lock bag and cover with yogurt marinade. Marinate over night.

Put 3 qrts of oil in a large pot. Make sure the oil only fills the pot half way as not to overflow.

Use a high temperature thermometer and heat the oil to 350 degrees.

Mix 3 cups of rice flour with 3 cups water add a pinch of salt and a pinch of cayenne and make a batter.

Toss marinated chicken in remaining 3 cups rice flour until covered with rice flour.

Coat chicken in batter and carefully drop in oil.

Cook until golden brown and center is cooked.

With a metal slotted spoon or tongs remove chicken from oil and lay on paper towel lined plate.

Toast waffles golden brown in toaster oven or oven.

Melt American cheese on half of the waffles.

Build the slider by laying the fried chicken on the non-cheese side of the waffle, place bacon on top of chicken, lay cheese side of waffle on top. Put two skewers per waffle longwise and cut waffle in half.

Plate 3 sliders to a plate. Sauce each waffle with the spicy maple syrup.


Spicy Maple Syrup

2 C Maple Syrup
1/4 C Sriracha
1/4 C Franks Red Hot Sauce

Combine all ingredients.
