Learn how to make kimchi with chef Edward Lee and Audrina Patridge as they make their way around South Korea on an all-new episode of 1st Look this Saturday after Saturday Night Live on NBC.

Napa Cabbage Kimchi
Makes one tightly packed gallon jar

Cabbage
1 large Napa cabbage, about 4 to 5 pounds
1 ½ gallon water
1 cup kosher salt

Paste
3 cups water
¾ cup sweet rice flour
¼ cup sugar

Guts
1 cup chopped onions
2 ½ cups chili flakes
10 ounces grated daikon radish
4 ounces grated ginger
6 cloves of chopped garlic
1/3 cup fish sauce

Add
2 cups chopped scallions

1. First slice the cabbage lengthwise into quarters. Core out the heart. Fit the cabbage into a large container and add the water and salt. Leave at room temperature for 2 hours. Drain and rinse the cabbage. Roughly chop the cabbage into about 2-inch portions following the length of the cabbage. Transfer to a large mixing bowl.

2. To make the kim-chi paste, combine the water, sweet rice flour and sugar in a pot and bring to a simmer. Stir constantly until the mixture thickens approximately 1 to 2 minutes. Allow it to cool while making the guts.

3. To make the guts, add the onions, chili flakes, radish, ginger, garlic and fish sauce into a food processor and puree on high until well combined.

4. Fold the guts into the cooled paste. Add the chopped scallions. Wearing clean gloves, mix this thoroughly into the cabbage Transfer to a clean glass jar or an air-tight plastic container with a tight fitting lid.

5. Leave this container out at room temperature for 24 hours. Then store in the refrigerator. It will be ready to eat in about 4 to 5 days but will keep for another 2 weeks.

Persimmon and Sunchoke Salad
Makes 2 salads

1 very ripe teardrop persimmon
1 teaspoon rice vinegar
Juice of 1 yuja fruit
Pinch sea salt

2 firm fuyu persimmons
½ cup water
½ cup rice vinegar
1 ½ teaspoon salt
1 teaspoon sugar

1 cup chopped nori
1 cup water
2 teaspoons gochujang paste
1 teaspoon soy sauce
2 tablespoons sesame oil

4 ounces sunchokes scrubbed clean
2 teaspoons sesame oil
Sea salt

4 shishito peppers
4 raw chestnuts, peeled and cleaned
4 perilla leaves

1. Make persimmon puree by scooping out the flesh of the ripe persimmon into a blender.  Add the vinegar, yuja juice and salt.  Puree on high to get a smooth puree.

2. Make the pickled persimmons by peeling the fuyu persimmons and slicing into thin rounds.  In a pot, boil the water, vinegar, salt and sugar.  Turn off the heat and pour hot liquid into a container with sliced persimmons.  Cover and let cool in the refrigerator for 2 hours.

3. For the nori puree, add the nori, water, gochujang, soy sauce and sesame oil to a pot and simmer for 10 minutes.  Let cool and puree in a blender on high.  Add a little more water as needed to get a thick puree.

4. Pre-heat oven to 400 degrees.  Cut sunchokes into large pieces.  Toss with sesame oil and salt.  Roast in the oven for 20 minutes or until the sunchokes are soft to the touch.  Let cool at room temperature.

5. Grill the shishito peppers whole until charred.  Set aside.  Slice the raw chestnuts very thin.  Set aside.  Chiffonade the perilla leaves.  Set aside.

6. To plate, add a little persimmon puree to a plate.  Curl the pickled persimmon slices and add to plate.  Add a little nori puree to each persimmon curl slice.  Add a few pieces of the roasted sunchoke.  Add 2 pieces of the grilled shishito.  Add a few sliced chestnuts and finish with some of the perilla leaves.  Finish with a little more sea salt and sesame oil and serve immediately.

Last weekend, Miami held Art Basel, the international art event that takes over the city for the better part of a week.  Artists, art dealers, and art fans attend in droves, making for a weekend full of exhibitions, parties, and traffic.

A LOT of traffic.

It’s a small price to pay for the opportunity to see such a large collection of creativity from all over the world.  One could easily get lost for hours in an exhibition center and not even scratch the surface of what is on display.  However, if you know the right people, you can attend the after-hours parties, where the velvet rope may as well be an iron gate, and where rappers, socialites, and artists can all be seen rubbing elbows.

On Saturday night at the SLS South Beach Hotel, one of these very parties was held for the artist Alec Monopoly.  I assume that Monopoly, a contemporary artist in the vein of Banksy and Andy Warhol, must feel as though he’s found a second home in Miami.

In Miami, graffiti is part of a cultural movement.  Certain neighborhoods of the city have every building in sight covered with ever-changing facade of patterns, characters, and color.  Wynwood, where this explosion of urban imagery has created a sort of cultural resurgence in this area of Miami, has become a sort of safe haven for graffiti artists, a title Monopoly applies to himself.

“I love Wynwood because graffiti is what inspires me” says Monopoly.

When we meet, the artist sits on a couch in front of the SLS Hotel’s signature duck, which he has given a face-lift for the event.  The usually all-silver sculpture now bears Monopoly’s signature style, with marker and spray-paint transforming the piece into a sort of oversized cartoon rubber duckie.  Stray drops of paint and streaks of ink drip down the sculpture, giving the sense that the work was done quickly and impulsively.  Indeed, Monopoly goes on to tell me that all of his art on display at the event was created that very week. 

These paintings all follow a similar process to striking results.  Appropriating pop-culture figures with a urban graffiti aesthetic, Monopoly’s work is meant to be cultural commentary with a capital C.  He prefers busy, loud images in favor of subtlety, making for pieces that make a big impression right away.  He even got his name from working with one of the most enduring pop-culture characters of the last century, Mr. Monopoly.  In many of the works displayed at the party show, Mr. Monopoly can be seen in various situations and positions.  Some of them show the board game icon with bags of money, but the innocent fun of the Parker Brothers game has been replaced by a sinister tone.  In other pieces, Mr. Monopoly is hanging from a cross.

“After this, I’m heading to Thailand,” he tells me.  “I want to bring this style of art to other parts of the world.  I’m having a show at the Contemporary Museum of Art in Bangkok.”  

I’m surprised to learn that Monopoly is from New York City, considering the city’s attitude towards graffiti.  Just this year, 5 Pointz, the famous building in Queens that for years had been one of the only displays for urban graffiti art in New York, was demolished in favor of a high-rise condominium.  However, it also seems to make perfect sense that Monopoly would be from the Big Apple, considering the rebellious tone of his work.

Monopoly sits at a table right up near the front of the party rather than being buried behind further ropes in the secretive VIP in the back.  He wears what appears to be a black snakeskin suit, a top hat, and a surgeon’s mask.  Like his art, Monopoly sticks out, especially in this crowd.  However, the thing that strikes me is his demeanor.  Here, at a party thrown for him, where everyone in attendance seems to want to see and be seen, Monopoly looks totally at ease.  As I approach him, I am expecting the reclusive, tortured stereotype of the artist.  But as I reach out to introduce myself, he pulls down his surgeon’s mask, shakes my hand, and give me a huge smile.  This guy is having a great time, and it’s not hard to see why.

Chimichurri
2-3 cloves garlic
2 chopped shallots
pinch of Red pepper flakes
2 jalapeños
1/3 C red wine vinegar
2 C Parsley, loosely packed
2 C Cilantro, loosely packed
3/4 C Olive oil
S AND P

2lb skirt steak
Manchego cheese
Arugula
Roasted peppers
Ciabatta, foccacia, or hero rolls

Using a food processor or immersion blender mix all ingredients for chimichurri. Season with salt and pepper to taste.

Place steak into a heavy duty Ziploc bag . Pour enough marinade into bag to cover meat. Set the rest aside to serve on the sandwiches. Let marinate for 3 hrs or overnight.

Remove excess chimichurri from steak and season with salt and pepper. Let sit at room temp for about 20 min.

Heat a gas grill to medium high (Cover. Let heat up for 5-10 min). Cook 3-5 minutes per side until meat is nicely charred and medium-rare.

Transfer steak to a carving board; let rest for 5-10 minutes. Slice across the grain.

Spread both sides of bread generously with chimichurri. Top with sliced steak, manchego, fire roasted red peppers, and arugula.
